Light & Refreshing Indian Cabbage Curry on Lower East Side (Dhaba Style Patta Gobi Ki Sabzi)

Description

Cabbage and peas are steamed to perfection, then simmered in a light and refreshing onion sauce.

Ingredients

2 tbsp. oil

4 cups cabbage, cut into 1 cm. squares

1/2 cup frozen peas

1/2 cup onions, roughly diced

1 tbsp. ginger paste

1 tbsp. garlic paste

1/2 tsp. ground turmeric

1 tsp. Kashmiri red chili powder or 1/4 tsp. of cayenne pepper powder

1/2 tsp. Kitchen King masala (see notes below to see where this is available or for substitutions)

1/2 tsp. cumin seeds

1/2 tsp. caraway seeds (ajwain)

1/2 cup tomatoes, roughly chopped into 1 cm. squares

1/4 cup cilantro, finely chopped

1 1/2 cups water

Salt to taste (approximately 3/4-1 tsp.)


Instructions

  1. Steam the cabbage and peas for 12-13 mins until the cabbage are tender but still have a bit of a bite.
  2. Heat 1 tbsp. oil in a pan on med. heat for 2 mins.  Add 1 tbsp. each of ginger and garlic paste.  Saute for 30 secs.  
  3. Add 1/2 cup each of onions and cabbage along with the masalas:  1/2 tsp. each of ground turmeric and Kitchen King masala + 1 tsp. Kashmiri red chili powder.  Stir to mix the sprices thoroughly and cook for 4-5 mins.  If the spices stick to the bottom of the pan, add 2 tbsp. water.
  4. Turn the stove off, let the mixture cool, then blend with 1 1/2 cups of water to a fine puree.
  5. In the same pan, add 1 tbsp. oil and add 1 tsp. each of cumin and caraway seeds.  Cook for 2-3 mins. until the seeds crackle and pop.
  6. Toss in the tomatoes, and the remaining cabbage.  Season with 3/4 tsp. salt and cook for 2 mins.
  7. Add the onion-cabbage puree and simmer for another 2-3 mins.  
  8. Taste, adjust seasoning and serve.  Light and refreshing Indian Cabbage Curry!

  2. If you don’t have Kitchen King masala or don’t have time or desire to try it, substitute with curry powder.
